you should be able to run ezpublish on any server that is capable of a recent php5 and mysql/postgres database. It doesn't matter whether you choose redhat / suse / fedora / ubuntu or even windoze. Prefer the platform you are familiar with. Installation is more or less the same. From platform to platform, the shipped binary-versions (ie php) may differ. Consult the page above (requirements) for detailed instructions.

edit: I am currently using ubuntu 8.04 LTS (32 and 64 bit) server for hosting several customer projects. One thing to cake of in this environment is to disable xcache for php-cli as it causes php-segfaults on several cronscripts (ezflow for example).
