EZ publish is a very strong and flexible CMS.
When you are new on the subject, It is not so easy to find the information needed.

What I suggest you, is to read about the philosophy under this CMS. Especially on Overrides and security Roles. You can find the basics on the Ez publish official site.

You can also do some simple changes to the basic site like this:

This is a good start too see the possibilities!

But I would recommend you to start changing the css-files and the
pagelayout (and other templates).

The site you mentionned (rigibore.co.uk) is effectively customized. But it is not hard to get to this point.
