I have never followed this lecture so I don't know what exactly happened to your site.css.
I would just insert it into the pagelayout.tpl like you would do with a normal html file.

To do that open the pagelayout.tpl and have alook at the aprt where the css files are imported. This should look roughly like this

    @import url({concat( 'stylesheets/',$css_file )|ezdesign});
{/section}
</style>

I think the loop adds the css files you imported although I am not sure about that. If the site.css is not there anymore just add it again. If it is there, the settings are most likely overwritte by one of the other css files. In this case try to change the order of the files, although this might mean that your settings are overwritten now, this depends on the content of your stylesheets.

To change the width have a look at the css files.Somewhere it will say something about width either for the body tag or for a div which contains the rest of the html. This depends on your css file so I cannot help you there. If you don't know where the stylesheets are located just search for them by their name in the stylesheets folder using the search function on your computer. If you should need help with that just ask.
