In content.ini.append.php you should set
[table] AvailableClasses[]=tableBlue
if you want to see "tableBlue" in OE on class list during table inserting.
What version of eZ publish do you use? I can`t reproduce your error.
Simple code works fine on eZ publish demo version.
<table class='tableBlue' border='1' width='100%'> <tr> <td></td> <td></td> </tr> <tr> <td></td> <td></td> </tr> </table>

I use 3.6. I took your table code and paste it into a article at admindevel.ezpublish.no/. The xml code are stored correct, but when I look at it as a normal user at devel.ezpublish.no I get <table class="renderedtable" ...
This is just like my problem.

I think there is the same problem with <td>.Are we allowed to set class for <tr> ?

This bug is fixed in all branches rev. 12879-12881.
