Not sure if you mean the sample text of the main page ( eZ publish is a popular open source content management system and development framework... ) if yes you have to edit "root" folder and change the description, title, etc of this folder.

This can be made with a "left click" on the folder or clicking the edit buttom over the titel "Sub Items"
