Do all the form data are stored in database (as collected informations) ? If not there is something wrong with your form.
Try to put Transport=file in MailSettings section of site.ini. Then all emails will be stored in var/log/mail folder, so you will be able to check if format of email is ok. Sometimes mail servers reject emails because of wrong format like lack of sender email.
