I didn't noticed that eZ publish change something on objectattributes as long as I didn't change the classes (or the objects itself). What eZ publish does is adding/removing/changing objectattributes if you add/remove/change attributes in the depending class. Note that eZ publish will initialise new attributes in classes on object level with the default object attribute values as defined in function "defaultObjectAttributeContent" of the datatype.
