Just in case anybody else ever bumps into this problem, it turns out
that Postfix is the bad guy. The current Postfix package in Debian Sarge (as of this writing) contains an unresolved bug which hammers long headers.
Feed sarge a fresher Postfix from backports and the problem is resolved.
