nohup java -jar start.jar&

should do the trick

You can also consider init.d scripts, as included in the ezfind 2.0 alpha1 release or in svn: http://svn.ez.no/svn/extensions/ezfind/ezp4/trunk/extension/ezfind/bin/scripts/
