Hi
You need to make a new siteaccess like you describe. You also need to create a new design folder, (for example: plaintext)
In the new siteaccess folder you edit site.ini.append.php to use the new design folder:
[DesignSettings] SiteDesign=plaintext AdditionalSiteDesignList[]=base
Then you can make new templates in the plaintext that just contain the text and no other elements.
This wasn't a step by step guide, but if you have any problems I'm happy to help.
