EZ does not store any server specific variables in the database. As far as I know the only relation between database and files is if there are images and other binary files to store as the storage path contains the node id and version. So I would copy the entire installation to this new server and get Ez to run here (which should mainly be a matter of adapting site.ini, image.ini and clearing the cache). Once EZ runs fine on the new server just copy the whole database from the old server to the new server again to have the updated data. Empty the cache again and everything should be fine. This way it does not matter whether the ezorder table is linked to other tables.
