It seem that all Ez Publish offer some content types (News, Articles, Files, ... ) but it doesn't seem to let you create new content type or to modify current ones.
You can create your own content classes, or modyfi existing. Conten class is collection of attributes, every attribute represent datatype, e.g price is price datatype, attribute e-mail is e-mail datatype, of course you can use string for e-mail as well.

Yes, you can.
use predefined tags or labels which can be aply to items so to build up specific search with these in combination with attributes and/or categories and/or type of content
eZ publish has very powerfull search engine. You can mark attributes as searchable, you can also add keywords attribute, which will automaticly make releations between objects of the same class, this is usefull when you want display realted content.
