If you dump / import the database and move the entire ez codebase (including your site settings, design, etc), that should work OK. Just make sure the new server meets the minimum requirements to run ez publish first.
You may want to clear all caches *before* moving, and empty old expired sessions from the database to minimise the size of the files you have to migrate, if the site is large:
