Hi,
take a look into your locale-file in /share/locales (e.g. eng-GB.ini or ger-DE.ini or which lanuage you use - depending on your configuration).
In it you can find an entry like this one:
[Currency] Symbol=EUR
Change the value for "Symbol" to anything you want. But beware of the encoding of your locale file.
