Being new on Ez Publish, I have no answer but for what I've seen, documents are either in state 'Draft', 'published' or 'archived' (which is a by the way a bit behind what you can do with plone). I guess a solution implies having another state, maybe by creating a dedicated attribute in the class of the submitted content.
I'd be very interested by hearing about solutions about that.
